Oolong is a diverse category of specialty tea with oxidation levels falling between green and black. It is distinct in that the leaves are bruised during processing; this damages the cell walls of the tea leaves and releases more of the plant’s natural sweetness. Seemingly endless in variety, Oolong teas are among the most sought after by connoisseurs.
