Green tea is green because it is put through one of several “kill-green” processes which halt the enzymatic activity in the tea leaf to keep it from oxidizing like black tea. There are numerous methods and styles for the production of green tea, and literally thousands of sub-varietals of the tea plant which it can be processed from.
